Welcome Back & Meatloaf Cupcakes

Happy Labor Day, Everyone!!!

Sorry about the long pause in blogging again, but I have been without internet for one week and then with school starting and trying to enjoy the last of summer before school starts I have just been not so active in the blogging department. But with school starting....I am back!

I have been on a two week sort of mini weight loss stagnation. I have lost 1.8 pounds in the past two weeks, but I am eating no more than 1000 calories per day (usually 850, but I added a another  100 calories into play within the past few days to try to spark the fire) and I have been working out at least five days per week. So, I know it is just a matter of time before I lose weight again. I am slightly stressed, but I am sure that it will all even out. I am taking the advice of everyone and even my own inner voice that it will all even out.

Tonight I made dinner from a recipe I saw earlier today on an awesome website, Truth In Change. The recipe was for Meatloaf Cupcakes with Caulitator "frosting", click on the name for a link to the recipe.

The cupcakes came out awesome and are my type of cupcakes. High protein, low carb, little to no sugar, and delicious.

In the recipe it calls for 3 chicken breasts that you grind up in a food processor, but because I was short on time I used one package of ground turkey breast (99% fat free).  Either way it came out excellent. 

It is amazing the healthy recipes that you can find on the internet in a flash. 

Next is the Chicken Enchiladas from the same website made with Cabbage leaves in place of the tortillas. Awesome!
